Fresh Collaborations is a food and beer pairing event that focuses on The Grey Eagle's Brewery Of The Month and brings some of Asheville's best chef's together for never-before seen food collaborations.
This installment we partnered with chef Parker Schultz of Laughing Seed Café. This 6-course food and beer pairing will see Schultz prepare two vegetarian courses, while the Taqueria's very own chef Matt Grush will prepare two meat courses. The final dessert course will be a joint effort by both chefs. Each course will be thoughtfully paired with a New Belgium Brewing beer.
Course 1 — Hors d'oeuvres
Bread & butter pickles, smoked oysters, hibiscus pickled shrimp, cured trout mousse, local honey & mustard, house chutneys, mixed olives, crackers, coppa, soppressata, pepperoni tomatoes, and mushroom jerky
Pistachio crusted & smoked pear, radicchio slaw, pistachio dust, taleggio cheese, smoked honey butter
Coffee-rubbed pork belly, Highland Gourmet balsamic beet coins, garlic squash & zucchini, pan gravy, micro pea shoots
Mushroom steak filet, grilled lemon garlic asparagus, blistered tomatoes, hollandaise, mushroom ju, charred Green River blue cheese
Braised short rib ravioli, shaved celery, pickled jalapeño, charred avocado, sorghum sweet potato puree, micro red amaranth
